It covers the platform (digital list, assistant, back office) and the ongoing sommelier work: reviews, turnover analysis, price updates. It’s deliberately low: we don’t want to live off software, we want to live off your wine selling.
Vinario, our supplier, buys direct from the winery and sells to you on a 20–30% margin — less than a traditional distributor (30–40%) because it doesn’t need their sales structure: the signed list and the assistant do that job. Your cost per bottle is equal to or lower than with your current supplier, with better wines.
When a guest orders home a wine they tried at your table, SumillerPro handles the shipping and payment through Vinario. Your restaurant takes 10% of each bottle for sparking the discovery. We take the retail margin on the rest.
Wineries don’t pay to get into the catalogue — getting in is earned at the tasting. They pay an 8% commission on what sells through the restaurant network, well below the cost of their own sales rep or the margin of a large distributor. If their wine doesn’t sell, they pay nothing: it leaves the catalogue.
