Why it exists

At the wine table there are three seats. And all three lose.

90% of restaurants in Spain buy their wine from two or three large distributors. It’s convenient: one order, delivery tomorrow, a year-end rebate. The price of that convenience is paid by everyone who sits down at the table.

What restaurants ask us.

I have commitments with my current distributor (fridges, rebates). Can I still start?

Yes, and it’s the usual case. The Signed List plan works with your current suppliers: we redesign the list using the best of what you already buy plus new wines where there’s room. The move to SumillerPro Total, if it comes, is gradual and you decide it once the numbers convince you.

What if a wine on the list doesn’t sell?

We swap it out. The list is alive: we analyse turnover every fortnight and the team proposes replacements. With SumillerPro Total, restocking also follows real sales, so you don’t build up dead stock.

Does the pairing assistant replace my floor staff?

It complements them. It serves the guest who won’t ask and the table that decides phone in hand, and frees your team at peak times. With SumillerPro Total we train your floor staff twice a year so they can champion the list with their own judgement.

Can I keep a few “usual” wines my guests ask for?

Of course. A good list isn’t dogmatic: if your regulars ask for a particular brand and it sells, it stays. The goal is to shift the centre of gravity towards wines with a story and a margin, not to impose a catalogue.

Who is behind SumillerPro?

SumillerPro is the hospitality service brand of the Vinario team, the Madrid (Chamartín) wine project led by Félix Lanz, winemaker and I.F.E. sommelier. Vinario also acts as the official supplier: it buys from the winery, stores and delivers. One contract, one point of contact.

What happens to my list if I leave the service?

The printed list and the retail prices are yours and you keep them. The digital platform, the assistant and the signed notes are part of the active service. There’s no lock-in after the first 4-month season.

Which areas do you work in?

We offer the digital list and the signed list across all of Spain. SumillerPro Total’s supply with fortnightly restocking operates today in Madrid and the surrounding area and we’re expanding it; for the rest of Spain we assess each project as our schedule allows.
